RUBY WINTER SALAD
Here is one of my favourite recipes - it usually converts those who don't like beetroot to being total beetroot fans.
It not only tastes delicious it also feels like it is doing you good! Oh yes and it's very pretty to look at with all the colours of red and orange and green and is low in calories too.....what more do you need?
- 2 carrots peeled and grated
- 1 beetroot (raw) peeled and grated (treat it like a raw carrot)
- 2 oranges - peeled and segmented (I do the chef way - cut the peel off down to the orange and then segment with knife - neater and quicker)
- 1 tablespoon finely chopped red onion (or use spring onions or leave out altogether)
- Lots of fresh chopped parsley
- Lots of fresh chopped chives
Toss and cover in the following dressing -
- 1 tablespoon manuka honey (you can use a liquid honey but I have to say manuka honey gives it a lovely toffee flavour)
- 1 tablespoon olive oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon wholegrain mustard
- 1 clove garlic crushed
Mix all of these together to make the dressing and pour onto other ingred, and SCOFF!!!
